African Banana Coconut Bake
5 medium bananas 1 tablespoon vegan margarine 1/3 cup orange juice 1 tablespoon lemon juice 3 tablespoons brown sugar, packed 2/3 cup shredded coconut
Heat oven to 375°F. Grease a 9-inch pie plate.
Cut the bananas crosswise into halves, and then cut each of those halves in half again lengthways. You should now have twenty banana logs, each flat on one side. Arrange them in the pie plate.
Use your knife to shave the tablespoon of margarine into several chunks and place them randomly on the bananas.
Drizzle with the orange and lemon juices. Sprinkle on the brown sugar and the coconut.
Bake until the coconut is golden. It should take about eight to ten minutes. You're about to have five servings of heaven! Oh, your place is gonna smell good.
Variation: Sure it's a dessert, but consider putting on a light dusting of cinnamon, say a quarter teaspoon or so, and serving this as vacation breakfast in bed. A nice iced coffee with some Silk creamer, and a strange newspaper from a faraway place - what a way to start a day. It's like being on vacation even when you're still at home. |
