Black Hole Brownies

Ingredients:
10oz unsweetened apple sauce
8oz cocoa powder OR melted plain chocolate [or half of each]
big pinch of salt
2 cups sugar
1 banana, mashed or chopped or puréed
1 1/3 cups plain flour
2 cups plain chocolate chips [if not more!]
optional extras: handful of nuts/dried fruits etc

Here's How:
1. Beat all the ingredients together with a fork until smooth - add a little more apple sauce if necessary.
2. Pour into an 8-inch brownie pan [for 'slab' brownies, or use a muffin tray to make portions that are easier to distribute at work or
wherever  ]. Bake at 350° until cooked so a knife comes out just about clean.
3. Leave to cool in the pan.
4. Top with goo [see below] if required, then cut out the pieces from the pan.

GOO - for the topping, or eating straight out of the bowl!
Ingredients:
2oz (1/4 cup) vegan margarine
1oz (1/4 cup) cocoa powder
4 tablespoons soy or rice milk
5oz (5/6 cup) unrefined cane sugar
vanilla essence
[optional] maple syrup

Here's How:
1. Combine the first four ingredients in a saucepan and bring them to the boil slowly, stirring constantly. Boil for 1 minute. [Alternatively, you can microwave these ingredients on Medium up to a boil, then get it bubbling for about a minute. Just keep a close eye on it to make sure nothing explodes  ]
2. Remove from heat and beat until cold. Add the vanilla essence and maple syrup [if using] and use a little icing sugar to thicken if
necessary. Spread on top of your cooled brownies/muffins.

Top tip: the Goo goes really, really fudgy and creamy if you leave it in the fridge for at least a few hours, then let it come back to room temperature before you use it. Try at least once when you're on your own, so that when you serve them up you can watch the disbelief creep across people's faces as they realize just how darned dark these things are.
