Red Lentil Pie
How very British!
Ingredients:
12 oz red lentils
1 onion, chopped
1 large carrot, chopped
3 sticks of celery, chopped
enough water to cover the lentils
1 tablespoon of Spike seasoning
fresh ground black pepper to taste
mashed potatoes for on top
1/2 block Vegan Gourmet Mozzarella, grated
This is easy and it's really good! Place the lentils in a deep saucepan. Cover them well with water. Bring to the boil, add the vegetables and seasoning, and then turn down to a simmer. Cook until tender. When tender place in a pyrex tray or lasagne dish and spoon on the potatoes. The quantity of potatoes was deliberately vague; you can put as much or as little as you like. We like ours about two inches thick. Sprinkle on the grated mozzarella.
Place in a 350 degree for fifteen minutes. Then open up the oven door just a crack and turn up the oven to broil. Broil the pie for several minutes until the potatoes are browned and the mozzarella begins to melt. . |
