Easy Lemon Pie
We LOVE lemons - the cobination of sweet and tart is just outta this world. Here's a great tasting, super easy recipe:
Ingredients: 1 crumb or pastry crust
1 lb extra-firm silken tofu (1 and 1/3 12.3 oz boxes Mori-Nu) 3/4 cup white sugar. 1/2 cup lemon juice (preferable fresh) 2 T cornstarch grated zest of 1 large lemon or 2 tsp lemon extract
Complicated Instructions: Preheat oven to 350 degrees. Blend filing ingredients together in the blender or food processor until very smooth. Pour into crust. Bake for 35 minutes.
That's it! Allow it to cool and then refrigerate for several hours (best overnight).. |
